Family mini meatloaves

These small meatloaves look like giant meatballs and are fun for the whole family. Enjoy with a crisp salad or alongside your favourite pasta or potato side dish.

Ingredients

  1. Step 1

    Wash hands with soap and warm water for at least 20 seconds. Wash all surfaces and equipment used for food preparation. Gently rinse onion, pepper and garlic clove under cool running water before preparing these ingredients
  2. Step 2

    In a large bowl, combine breadcrumbs, cheese, egg, ¼ cup (50 mL) of the pasta sauce and pepper. Stir in onion, pepper, if using, garlic, oregano and hot pepper flakes. Add meat and mix with clean hands until combined well.
  3. Step 3

    Divide mixture evenly among a 12-cup muffin tin. Top each with remaining sauce and bake in a 400°F (200°C) oven for 20 minutes. Sprinkle each with cheese and bake for another 3 minutes or until melted and the meatloaf reaches an internal temperature of 160°F (71°C) when checked with a digital food thermometer.

Tips

  • You can use lean ground pork, veal, turkey or chicken in place of the beef if desired.
